Malva Pudding, as it is called, is an easy-to-make dessert that will have you asking for a second helping, and a third and maybe even a fourth! This sweet treat is my very favorite pudding! Try it, it is fool proof!
To make this dish you will need 250 ml flour, 125 ml sugar, pinch salt, 12.5 ml butter, 250 ml milk, 1 egg, 12.5 ml apricot jam, 10 ml bicarbonate of soda and 12.5 ml vinegar.
To make the Malva Pudding batter, sieve flour, sugar and salt together. Using your hands, rub butter into the flour mix, thus preventing clots. Mix milk and egg and add to flour mix. Add apricot jam and mix well. Dissolve bicarbonate of soda in vinegar and add to flour mix. Place mixture in a baking tray and bake at 180 degrees Celsius, until golden brown.
When the mixture is cooked, prepare the sauce that will be thrown over the batter. To prepare the sauce you will need 150 g butter, 190 ml sugar, 250 ml milk, 250 ml fresh cream and 5 ml vanilla essence.
To make the sauce, place butter, sugar, milk, fresh cream and vanilla essence in a pot on a hot stove top and mix until sugar has dissolved. Throw over pudding as soon as it comes out of the oven. Serve hot or with custard.

Malva pudding is a delicious dessert to be enjoyed at any occasion. My mother used to make this pudding as a surprise when we brought home good report cards. Certainly a pudding to remember!
